Over the years, eggs have gotten a bad wrap. From being demonized as little cholesterol-filled heart attack bombs to being vilified as salmonella infested grenades targeted at your digestive track, the bad press on these unexpectedly controversial little orbs have the majority of the general public hesitating with forks mid-air over their traditional American breakfast. At Guckenheimer, we strive to be a corporate food service provider with a more balanced perspective on foods to choose for peak performance.  Here is our take on what we still consider to be the incredible, edible (emphasis on edible) egg:

Go ahead and eat your omelet.  

Healthy adults can enjoy an egg a day without significantly impacting their risk of heart disease.  According to the Harvard Medical School, research has shown that most of the cholesterol in our body is made by our liver and doesn’t come from cholesterol we eat.  You should still be careful of stuffing your cheeks with eggs if you have a pre-existing medical condition, but otherwise feel free to add that boiled egg right on top of your salad.

Eggs have a heart of gold and do a lot to help your body.

 Honestly, we should be ashamed about how we have maligned the egg.  Not only do these little powerhouses keep you fuller longer with complete protein (all the amino acids needed to build muscle) they also are packed with vitamins A, D, E, K, and B2.  That means they go hard in the paint when it comes time to help out your eyes, nerves, brain, and other body parts. While you are doing that, let’s explore the fun side of our little egg friends.  They have come a long way from starring as the colorful centerpieces to your Easter egg hunt.  Their new trick? They are transforming into clouds!  Well, it is not really new, it is old (like really old… 17th century old).  But if we have learned anything from ‘90s movie remakes (Jumanji and Power Rangers guys, really?) and the resurgence of the t-shirt under the tank top fashion trend, all old things become new again.

Cloud Egg Meringue

Cloud eggs are part un-sweetened meringue and part slightly runny, yolky golden goodness. To make them, first you separate the yolks from the whites and then beat the whites to make meringue. Dollop the meringue clouds onto a baking sheet, then create little indentations in the middle and place the yolks.  Bake for 4-5 minutes in a 450-degree oven and voila! You are eggs-actly on Cloud 9.
