Food inspiration can come from anywhere — a memorable meal, a culinary tradition, a technique worth exploring or an ingredient that inspires chefs. But inspiration is only the starting point. The real work is turning an idea into something guests can experience firsthand.
Autostrada, Guckenheimer’s new café concept, brings this approach to Italian cuisine. Inspired by Italy’s north-to-south Autostrada A1 motorway, our culinary journey travels from Milan through Bologna, Florence and Rome to Naples, with each stop exploring the ingredients, dishes and traditions that give each destination its own unique culinary qualities.
Here are five ways our culinary experts move global food trends from concept to café, aligning creativity, culinary tradition, chef skills and exceptional guest experiences.
1. Start With a Story, not a Trend
Great concepts are inspired by a variety of places, cultures and the food that resonates emotionally with guests. For Autostrada, the opportunity was exploring the variety of Italian cuisine. Although pasta may be the first thing you associate with Italy, traveling through Italy showcases how different the food can be from one area of the country to the next.
Milan reflects the Lombardy region of Italy’s strong dairy and rice-growing traditions, featuring rich flavors and disciplined techniques. Bologna is the home of fresh egg pasta and long-simmered sauces and broths. Florence is rooted in the Tuscan cooking tradition, where bread, legumes, olive oil and seasonal vegetables take center stage. Rome brings bold ingredients and unique culinary traditions, while Naples draws on the flavors of bright tomatoes, seafood, fresh cheese and citrus
"We're looking at the traditional techniques behind a dish, the ingredients that define a region and, just as importantly, how we bring that experience into a workplace café. We want it to feel authentic, but it also has to work beautifully for our guests"
2. Make the Familiar Feel New
Italian food isn’t just one cuisine. Since every region of the country has its own ingredients and traditions, Autostrada is designed to be a journey across Italy, bringing distinct flavors and techniques to the workplace café. For guests, this may mean trying something completely new or discovering a new take on a dish they already love.
3. Find the Sweet Spot Between Approachable and Authentic
Authenticity comes down to the details — things like the texture of the pasta or the quality of an ingredient or technique. Those details should also be a part of the workplace café’s approach.
Autostrada brings culinary innovation and guest experience together via chef-crafted foods and flexible formats, from weeklong experiences to pop-ups and rotating features. The result is food grounded in Italian tradition while also meeting the dietary demands of a workforce.
4. Pressure-test Ideas
Guckenheimer’s Food Innovation Test (f.i.t.) Kitchen is where Autostrada moves from inspiration to execution. Guckenheimer chefs develop recipes and test ingredients and techniques while also considering how each dish will be received in a workplace environment.
Development continues beyond the f.i.t. Kitchen. Feedback from field chefs helps the culinary team understand what works in different locations, how guests respond and where concepts can continue to be pressure tested.
5. Give People Something to Talk About
Food acts as a natural conversation starter. A new dish can spark a question about an ingredient, introduce a culinary tradition or simply give colleagues something to share.
Autostrada brings these opportunities into the café as the journey moves from Milan to Naples. Each stop introduces new flavors and dishes while creating another reason for people to gather around food. Connection is an important part of Guckenheimer’s approach to workplace dining, and we create experiences where people can come together around food.
Maybe someone discovers a dish they’ve never tried before or talks to a colleague they’ve never met. Maybe it gives them a little something to look forward to that day.
That’s what Autostrada is all about — using food to create moments of connection and discovery at work.
